· Beetroot and Raspberry Salad ·

Ingrédients :

  • 8 cooked beetroot
  • 1 red onion
  • 1 small handful of oregano (preferably fresh)
  • 1 punnet raspberries
  • Red wine vinegar
  • Slices of goats cheese
  • Olive oil
  • Salt and Pepper

Method

  • Slice the beetroot and chop the onion
  • Mix together with the oregano, olive oil, vinegar, salt and pepper
  • Garnish with the goats cheese and raspberries
  • Serve cold
