Ingrédients :
- 300g vacuum-packed cooked lentils
- 4 eggs
- 1 small red onion
- 3 slices smoked salmon
- 1 avocado (or cucumber)
- 1 handful rocket (or lamb’s lettuce)
- 1/2 lime or lemon
- 1 tbsp olive oil
- salt and pepper
Method
- Bring a small pan of salted water to the boil, then cook the eggs for 10min for boiled eggs or 5min for soft-boiled eggs (if you prefer to keep the yolk runny).
- Peel and chop the red onion. Dice the avocado and sprinkle with a little lemon juice to prevent oxidation. Mince the smoked salmon.
- Mix all the ingredients together, drizzling with lemon juice if you like. Serve each plate with an egg (if soft-boiled, cut up at the last minute).
